1. Using a sharp chef's knife, slice each zucchini lengthwise into very thin slices, as thin as you can. Slice each of those slices into thin, noodle-like strands. Don't worry about it if your slices aren't even.
2. Alternatively, make your life easy and buy packaged zucchini noodles at the grocery store. I get mine at Whole Foods.
3. Heat the butter in a large skillet over medium-high heat. When melted and foamy, add the zucchini noodles. Cook, stirring often, until just tender, about 4-5 minutes.
4. Add the garlic and cook, stirring, 1 more minute. Turn the heat off.

Cook the chicken for 20-30 minutes or until a digital thermometer reaches 165 degrees fahrenheit. Remove the chicken from the oven, let sit for 2-3 minutes, then dice it up.
3. Heat 2 tablespoons of avocado oil in a large sauté pan on medium heat. Add the minced garlic and stir for 30 seconds. Then add the baby spinach and stir until it's wilted down, about 3-4 minutes.
4. Once all of the spinach has wilted down, add the zucchini noodles and diced chicken. Stir together for 1-2 minutes.
