1. Microwave the spinach according to the package instructions. Drain spinach thoroughly by pressing through mesh strainer and squeezing excess liquid our with cheesecloth or paper towels. Set spinach aside.
2. In a large pot over medium-low heat add cheeses, tomatoes, milk and garlic powder. Cook until melted, stirring occasionally so the cheese does not burn.
3. Stir in the spinach and season to taste with several dashes of cayenne.
4. Serve immediately or pour into slow cooker to keep warm. Serve with chips and veggies for dipping.

3. Turn off heat and add in garlic, pepper, and pepper jack cheese. Whisk to melt the cheese and add in 1/4 cup of cheddar at a time whisking constantly to melt. Continue until all the cheese is added. Add in tomato/onion mix and spinach. Serve immediately or transfer to a fondue pot or crockpot until ready to serve.
