Homemade honey roasted peanuts with a little kick! Preheat oven to 300 degrees F. Line a rimmed baking sheet with parchment paper. Place the peanuts in a large bowl. Microwave the honey in a medium bowl for 30 seconds (it will begin to bubble). Remove from the microwave and stir in ¼ cup of the sugar, the salt and cayenne pepper.
Mix peanuts, corn syrup, and light brown sugar in a mixing bowl or large measuring cup, until the peanuts are well-coated. Sprinkle the salt and spices over the peanuts and stir just a few times, but not enough to dissolve the salt. Spread the peanuts evenly on the baking sheet and bake for 25-30 minutes,...
Add the peanuts to the honey mixture and stir until they're all evenly coated. Pour the peanuts out onto the prepared baking sheet and spread them into an even layer.
