In a large bowl, mash the garlic and salt together until a paste forms. Add the spices and olive oil and mix until well combined. Add additional cayenne pepper if you prefer very spicy flavor. Place the chicken thighs, skin side down, into the spice mix in a single layer. For each thigh, slice along both sides of the bone.
All the thighs should be well coated in spices and oil. Cover and set aside to marinate at room temperature until ready to grill. Preheat your grill so that the grates are between 390°F and 450°F. Place the thighs, skin side down, on the warmest part of the grill and cook for about 8 minutes.
