Easy Special Bibingka Recipe is Today’s Delight, a Filipino baked rice cake made special with all the toppings. Bibingka is made by combining rice flour, egg, sugar and milk until smooth, then baked and topped with salted egg, cheese, butter and grated coconut.
Glutinous rice flour- also called sticky rice flour. This will give the kakanin its chewy texture. Sugar – To make sure that your Royal Bibingka does not become too sweet, use less if making it with sweetened macapuno. Coconut cream- use full-fat if you want it extra rich and creamy.
You can omit the salted eggs and replaced with a slice of cream cheese. You can add them even before the bibingka sets, say about after 15 minutes, you can add it and your slice of cheese filling will be in the middle. Loading... This is really good!
Similar to putong bigas, traditional bibingka is made with galapong. Rice grains are first soaked in water overnight to ferment and soften and then ground using stone mills into a thick paste. The resulting rice dough is combined with water or coconut milk to form a batter and baked in a banana-lined terra cotta pot until set and nicely charred.
