1. Heat a large skillet over medium high heat and melt butter.
2. Add in rice and cook until lightly browned, stirring frequently, 2-3 minutes. Add in onion and saute for 2-3 more minutes, stirring frequently or until slightly golden brown.
3. Add in garlic, cumin, chili powder and oregano. Saute for one minute. Pour in the chicken stock, fire roasted tomatoes and bay leaf.
4. Bring to a boil then reduce to a simmer. Cover and simmer for 15-20 minutes or until the rice is tender. (Refer to the back of your rice, some cook times are shorter or longer depending on what rice you choose)

1. Add butter and olive oil to a large saucepan over medium heat. Add carrots and onion to the saucepan, stir and cover for 6-8 minutes until softened. Remove the lid and stir in the tomato paste, followed by the water, salt, garlic powder, cumin and pepper and raise heat to medium-high.
2. Allow mixture to come to a boil, stir in the rice and reduce heat to medium-low or low, just so that a simmer is maintained. Cover the saucepan and allow to simmer for 18-20 minutes. Do not remove lid and do not stir.
3. Once all of the liquid has been absorbed, remove from the heat and set aside, still covered, for 10 more minutes. Do not skip this step.
4. Remove the lid and using a fork, fluff the rice. Allow to cool slightly, serve and enjoy.
