1. Remove steak from any refrigeration and place on counter to come to room temperature. While it’s coming to temperature, mix all of the spices in a small bowl and stir to combine.
2. Add dry rub spices to your steaks — use one quarter of the rub for each side of the steak. Press the rub into the steak to make sure that it adheres.
3. Heat a seasoned cast iron grill pan over high heat. Add 1-2 teaspoons of your cooking oil/fat of choice.
4. Cook 3-4 minutes on each side over high heat to create a char on the outside of the meat, then reduce heat to medium and cook 3-4 minutes on each side again to bring internal temperature up. I like my steak medium-to-medium-well, so if you like yours cooked differently, adjust the time accordingly. Allow steak to rest for at least 10 minutes.
