This recipe for sourdough hot cross buns is just like our soft sourdough dinner rolls with the addition of dried fruit, ground cinnamon, ground cardamom and ground nutmeg. The tops are brushed with an egg wash before baking as well as a "cross" that is made out of a paste of flour, oil and water.
Preheat the oven and bake the sourdough hot cross buns for 25-30 minutes, or until dark golden brown. Remove from the oven and brush the tops with a generous amount of melted butter. This both softens the buns, and adds flavour. Cool 10 minutes and enjoy!
Divide your dough into 12 pieces. Take each piece and gently pinch the dough into the centre forming a ball. Use your hands to tension each ball (like you're shaping a boule). Arrange the sourdough hot cross buns on a tray (see notes below). You can shape them and arrange them just touching in a deep tray.
