1. Mix the ingredients for the pre-dough in a large bowl. Cover and let it rest at 77-86°F/25-30°C degrees (e.g. stove with switched on oven lamp) for about 2 hours.
2. Add flour, water and salt; knead everything from the food processor for about 10 minutes. Cover the bowl again and leave to rise in a warm place for 3 hours. Stretch and fold once.
3. Cover the dough and leave to rise in the refrigerator for 20-24 hours. Then stretch and fold again and form into a ball. Allow it to reach room temperature for about one hour. If available, place in a well-floured fermentation basket.
4. Preheat the oven to 446°F/230°C, preferably preheating a Dutch Oven as well (see Notes). Carefully turn the bread dough into the preheated pot, alternatively onto a pizza stone or a baking sheet.

1. Place water in a large mixing bowl and add in starter with melted butter, stir to combine. Add in remaining ingredients and stir until well combined. Dough should clean the sides of the bowl.
2. Knead for 8 minutes and check for window pane test. Knead for 2 more minutes if not at window pane and check again. Dough shouldn’t stick to your fingers.
3. Lightly flour surface and roll out dough into a rectangle. Roll up into a loaf, tucking edges under to create tension on top. Place in parchment lined or greased loaf pan.
4. Cover so it doesn’t develop a skin or dry out and allow to rise until doubled and up even with edges of loaf pan. Right before baking, brush top with melted butter.
