Keto Sour Cream Cake Unlike other low carb cakes, this sour cream cake has minimal ingredients and is easy to prepare. Most keto dessert recipes use a blend of low carb flours but this cake only calls for almond flour. Sour cream and melted butter keep the texture moist and velvety while vanilla adds a delicious flavor.
The sour cream imparts a subtle flavor and lush texture. Using all almond flour keeps the recipe simple. As you know, my low carb sweetener of choice is Sukrin :1, which is a 1:1 natural sugar replacement. It has zero calories or carbs and measures like sugar.
In a large-sized bowl using an electric beater mix the softened butter, sour cream, sugar substitute, and vanilla extract until light fluffy. Next, add the eggs one at a time be sure to combine well after each addition. To the wet ingredients slowly add all the dry ingredients one tablespoon at a time while continuing to use the mixer.
Allow the cake to cool in the pan for 10 minutes before inverting to a baking rack to cool completely for another 20 minutes or so. Serve the sour cream sugar-free pound cake plain or with your favorite keto-friendly berries and whipped cream. Store leftovers in the refrigerator for up to 5 days or freeze for 3 weeks.
