1. Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
2. In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1. Preheat oven to 325 degrees.
2. Drain pineapple reserving 3 tablespoons of juice. In a mixing bowl cream together butter and brown sugar until light and fluffy. Beat in egg, pineapple, and vanilla. In another bowl combine flour, baking powder, baking soda, and salt. Stir dry ingredients together. Gradually add dry ingredients to the creamed butter and sugar.
3. Grease cookie sheet with non-stick spray. Drop cookies by cookie scoop onto baking sheet about 2 inches apart. These cookies will spread. Bake for 17 - 20 minutes or until golden. Remove to wire racks to cool.
4. For frosting combine confectioners' sugar, lemon zest, and about 2 tablespoons of the pineapple juice to achieve spreading consistency. Frost cooked cookies.
