1. In a large bowl with an electric mixer or a stand mixer, cream together the softened butter and sugar until smooth.
2. Add the egg, ricotta cheese, lemon juice, lemon zest, vanilla extract and almond extract. Mix until all of the ingredients are combined and smooth. Be sure to scrape down the sides of the bowl.
3. In a medium bowl, whisk together the flour, baking powder and salt. Add the flour mixture to the wet ingredients in 3 increments. Be sure to mix together in between each increment. Just mix until combined- do not over-mix.
4. Cover the mixing bowl with plastic wrap and refrigerate for at least an hour, or overnight.

2. In a medium bowl, cream the butter and sugar. Add the eggs, ricotta cheese, and vanilla extract; mix until well combined. In a separate medium bowl, combine the flour, baking powder, and baking soda. Add the flour mixture to the ricotta mixture; mix well. Roll or scoop the dough into teaspoon-sized balls. Place on an ungreased cookie sheet about 2-inches apart.
3. Bake 8-10 minutes or until lightly browned. Allow cookies to cool on the baking sheet for 3 minutes before transferring to a wire rack to cool completely.
