1. While you are prepping the ribs, start preheating your pellet smoker at 225F. It is important to follow the instructions and start-up procedure of your brand of pellet smoker.
2. Ribs usually come with a thin layer of tough skin on the underside of the rack. This is called the silver skin and it needs to be removed so the seasonings can penetrate the meat. See the video in the post above for insutructions on how to best remove.
3. Lay the ribs on a sheet tray and add about 2-3 tablespoons of rib rub per side. You don't want to completely coat them...leave some meat peaking through.
4. Once the smoker is pre-heated, you can put the rack (or 2 racks) directly on the grates and let them smoke. Leave them alone for at least 4 hours. The less you open the grill, the shorter your cook time will be. You do want to keep an eye on the smoker temperature and make sure it stays where you set it.

3. Rub all over both sides of the ribs. Lay ribs in a large roasting pan (cut in half if you need to, to make them fit). Add the water and cover the whole pan tightly in foil.
4. Bake 1 & 1/2 hours, until meat is very tender. Check occasionally that the water has not evaporated away, as this can burn your ribs.

2. Preheat smoker to 250 degrees, we use local fruit woods like apple. Really depends on your preference.
3. Add the ribs to the smoker for about 90 minutes. After 90 minutes begin spritizing. We do it every 20 minutes or so to keep them moist. But get at least 3 good spritzes. After 3 hours total, you should see the bones protruding about ¼ inch, that is the sign to wrap.
4. Place foil on a sheet pan, grab each rib (one at a time) and place on the foil. Add butter (2 tablespoons per rib, cut up into smaller pieces to evenly disperse), a little sauce and/or little apple cider vinegar. Wrap tightly. Repeat for each rib.
