Transfer the nuts to an aluminum foil roasting pan, and spread them out into a single layer. Place the pan over indirect heat in the preheated smoker and close the lid. Smoke the nuts for 2 hours, stirring every 30 minutes. Remove the pan from the smoker, and let the nuts cool to room temperature before serving or storing.
