1. Trim up each piece to about 4 inch long strips, and cut away any stray pieces of meat or fat hanging off of the pieces.
2. Place them on a foil lined cookie sheet or in a disposable pan and rub them down with the olive oil. Follow the olive oil up with your favorite bbq rub.
3. Setup your smoker to cook at 225 degrees.
4. After placing the pork ribs in your smoker, set up your Thermoworks Smoke to monitor the internal temp of one of the ribs.

1. Preheat the grill. Preheat your grill for indirect grilling. The target temperature on your grill is 225 degrees F. I recommend using fruit woods like apple, peach, cherry, or hardwoods like hickory or oak.
2. Trim the ribs. Pat the ribs dry with a paper towel. Trim down any excess fat and remove the thin membrane on the back of the ribs using a paper towel for grip.
3. Season. Season all sides of the pork ribs liberally with my Signature Sweet Rub. You can purchase this rub directly from my store (link in ingredients list) or you can make your own (link in recipe notes)
4. Melt the butter and cider. In a small saucepan combine the butter and apple cider. Place on your grill alongside the ribs.

1. Remove the country style ribs from the package and rinse them under cold water.
2. It’s pork.. very good pork, I might add and as most of you know, that calls for a nice sticky base of yellow mustard to help the rub to stick to the meat.
3. If you have Bradley racks like I do, lay them on the rack with just a slight bit of space between each one to allow the smoke to get in there a little bit. Cooling racks also work well.
4. Light up your smoker whether that means actually lighting the fire or just plugging it in and dialing in some settings. Do what it takes to get your smoker going at about 225°F.
