1. Place the lamb in a large bowl.
2. lSeason the meat with spices/herbs - allspice (pimento), nutmeg, cinnamon, ginger, cardamom, coriander, turmeric, black pepper, thyme, cilantro, pink salt.
3. Wrap and refrigerate for several hours or overnight.
4. Add your oil to your skillet (I'm using my 2 in 1 stewing slow cooker unit) with lamb and proceed to sear the meat on medium heat (this will take several minutes).

1. Peel and cut the carrots and the onions into chunks and place them in the crock pot. Add about ½ teaspoon fine sea salt and pepper.
2. If the shoulder doesn’t fit in the slow cooker, you will have to divide it at the joint. Trim all excess fat from meat, I do trim a lot of it and I also remove the thick layer of fat on top. Rub well with salt, pepper and dried rosemary. If using fresh rosemary, leave out the dried one.
3. Make deep slits into the lamb using a sharp thin knife, take care not to pierce all the way through the meat. Stuff the holes with slivers of garlic. If using rosemary or anchovies, cut them into tiny bits and use to fill the cavities as well.
4. Arrange the meat in the cooker over the veggies. Pour the wine and the stock around the meat, but not on top of it.

1. Pat lamb dry and season generously with kosher salt and black pepper on all sides (if you have the time, set it aside at room temperature for up to 1 hour, otherwise continue on)
2. Coat the bottom of a large skillet (I used my cast iron skillet) with a little bit of extra virgin olive oil. Heat skillet over medium heat until oil is shimmering but not smoking. Add the lamb and brown well on all sides (increase heat to medium-high if needed); about 7 minutes. Remove from heat and let cool enough to handle.
3. Cut a few slits into the lamb on both sides and insert a slice of garlic in each of the slits.
4. Now make a wet garlic spice rub for the lamb. In a small bowl, combine the minced garlic, rosemary, thyme, oregano, and paprika. Add lemon juice and 3 tbsp extra virgin olive oil. Coat lamb on all sides with the garlic spice rub.
