Instructions Pour broth into the bottom of the slow cooker. Mix together Moroccan spice rub in a small box. Press 2 tbsp of the spice rub firmly all over the lamb shoulder meat. Add lamb and vegetables to the slow cooker. Top with fresh mint. Cook HIGH 3-4 hours or LOW 6-8.

Dinner – Slow roast overnight, allow lamb to cool to room temperature, then store in fridge. Take out 3 hours prior to serving (to de-chill for more even, faster reheating). Reheat covered in oven at 150°C/300°F for 1 hour (for 1 lamb shoulder; 4 will take longer).
Sprinkle the top of the lamb shoulder with the Italian seasoning. If the Italian seasoning blend does NOT contain salt, sprinkle the roast with about 1/2 teaspoon of salt as well. Cover and turn the slow cooker on. Cook on high heat for 4.5-5.5 hours or on low heat for 7-8 hours, if time allows.
