2. Combine all the rub ingredients in a small bowl; then rub each rib generously with the mixture. At this point you may place the ribs in a sealed plastic bag and refrigerate overnight. This will produce the best flavor but it is not necessary.
3. To make on a gas grill: Light one side of the grill and when the temperature inside the grill reaches 300 ℉ place the ribs on the UNLIT side of the grill, close the lid and slow roast for about 3 hours, being careful to maintain the temperature.
4. In the oven: Preheat oven to 300 ℉. Place ribs on a rack in a roasting pan. Roast for about 3 hours.

3. Prepare to roast. Take the ribs out of the fridge 20 to 30 minutes before you start cooking. Preheat the oven to 300° F while the ribs are resting.
4. Make the BBQ Sauce. Heat up olive oil in a medium saucepan over medium heat. Sauté garlic and onion until they are translucent. Reduce to low heat and pour yellow mustard, Worcestershire sauce, apple cider vinegar, and ketchup.
