Because we always have tons of blueberries in the freezer, I’m always on the look out for new low carb blueberry recipes. I often just make a sugar free blueberry syrup that I’ll use over low carb waffles or pancakes. I also pour this blueberry sauce over low carb ice cream and mix it into plain high fat yogurt.
If you want a sugar free blueberry syrup, I recommend using granulated swerve, a powdered erythritol. I make syrups, purees and compotes all the time using the Swerve and no one knows the difference. I tend to start with half the amount of Swerve to what I normally would use for sugar.
Basically you heat the mixture until the sugar dissolves. This mixture is then used in place of sugar for sweetener in many cocktails. Obviously on a keto diet you are not going to want to use a regular simple syrup! It will have way too many carbs for many people to stay in ketosis.
You simply boil blueberries, sugar and water together. The blueberries will burst and there is no chopping or pureeing involved. You will have to press the mixture through a sieve to avoid any skins.
