Heat a heavy-based frying pan over medium heat. Add oil and blanched almonds. Cook almonds by tossing until golden brown. Add thinly sliced silverbeet leaves and stir well until they begin to collapse. Add lemon juice, salt and freshly ground black pepper. Stir well to combine, and cook in the pan until silverbeet is softened.
Got an airfryer? Packed with folate, fibre and vitamins A and C, this Mediterranean native, also known as chard, is delicious in soups, tarts and frittatas. While the leaves require minimal cooking and, when fresh, can be eaten raw (we recommend slicing into thin ribbons and massaging with extra virgin olive oil), silverbeet stalk is best sautéd.
These low carb keto lemon bars are a must-have spring dessert! With a creamy, sweet, and tart lemon filling and buttery shortbread crust, nobody will believe these are sugar-free lemon bars, either. Just like with magic cookie bars, peanut butter bars, and keto lemon meringue pie, the layers of flavor take every bite over the top!
