What are Ricciarelli? Pronounced ‘reach-ee-a-relly,’ Ricciarelli are delicious Italian almond cookies, sweet chewy and melt in the mouth.
The origin of ricciarelli di Siena dates back to the fifteenth century : the almond paste – in the form of marzipan or Marzapanetti – was once very popular in the town and Siena was famous even outside its territory for its production.
However, no matter how prepared they are, ricciarelli di Siena can be eaten still warm, but they are even better the following day, paired with dessert wines, coffee, or white tea. If using regular raw almonds, toast them in a preheated oven (150°C/300°F), and after they have cooled completely, peel them and grind them.
Flatten lightly the discs on the board, then give them an oval shape and coat them well with powdered sugar. Set the Ricciarelli on a baking sheet, then lightly wet your fingers with water and wet the surface of each cookie (it should be just slightly wet, not drippy), then dust again with abundant icing sugar to coat them well.
