4. Heat more olive oil in the same pan you browned the veal if necessary then add the finely chopped carrot, celery and onion. Saute the vegetables on a medium heat until softened but not browned. Add the garlic and saute for 1 more minute.

2. Liberally salt & pepper the veal. Dredge each veal shank in flour on all sides.

4. Add the mirepoix (carrots, celery, onion) to the hot pan and cook for 2-3 minutes until soft. Push the vegetables to the sides of the pan, and add the tomato paste and garlic in the center and let cook for 1-2 minutes. Mix all together and cook for another 5 minutes. The tomato paste will start to deglaze the pan. Scrape up the brown bits with a wooden spoon to grab all the flavor for the braising liquid.
