1. In a medium to large size stock pan, add the cauliflower florets and chicken broth simmer over medium to medium high heat until they are tender.
2. Once the cauliflower is tender, drain off the remaining broth and add cream cheese, cheddar cheese, butter, salt and pepper and mash until it resembles the texture of grits.
3. Cover the grits to keep warm while you make the shrimp.
4. Heat a large skillet to medium heat, melt 1 tablespoon of butter, add garlic and the raw, shelled shrimp to the skillet and sprinkle the cajun spices over the shrimp. Stir well so it is evenly coated.

1. MICROWAVE the frozen cauliflower for 10-12 minutes, stirring occasionally. Mash with potato masher until the consistency of grits. Add one tablespoon of butter, the heavy whipping cream and the smoked gouda cheese. Mix well and season with salt and pepper to taste. Keep warm.
2. SAUTE the pancetta or bacon on medium low heat until crispy. Remove and set aside. In the remaining bacon fat, add 2 tablespoons of butter and cook the shallots/onions until lightly browned. Add the garlic and stir until fragrant, about 30 seconds.
3. ADD the shrimp. Cook for 8-10 minutes or until the shrimp are just cooked and still tender. Remove from the heat and mix in the reserved bacon/pancetta and scallions. Mix well.
4. SERVE the “grits” in a shallow bowl and top generously with the shrimp and sauce.

1. Make the grits. Add cauliflower (24 ounces) and water (1/4 cup) to a large heavy bottom pan. Bring water to a simmer and cover until soft -- about 8-10 minutes (will vary depending on the heat of your pan - you want the cauliflower soft, and completely defrosted). Remove from heat and stir in the cream cheese (1/4 cup), butter (1 tablespoon), and cheddar (1 1/2 cup), salt (1 1/2 teaspoon) , and pepper (1/2 teaspoon). Stir until the cheddar has completely melted into the cauliflower. Set aside.
2. Saute. Fry the bacon (6 slices) in a heavy bottom pan until crispy. Place cooked bacon on a paper towel-lined plate and set aside. Add shrimp (1 pound) to the bacon grease and cook over medium heat until cooked through and pink (you may need to do this in batches depending on the size of your pan). Add the lime juice (4 teaspoons), parsley (2 tablespoons), green onions (1 bunch), and garlic (3 large cloves), and saute for 3 minutes. Add bacon (and shrimp if you cooked it in batched) back to the pan and toss to coat in sauce.
3. Enjoy! Spoon cauliflower grits onto a plate and cover with shrimp and sauce. Enjoy that cheesy goodness!
