1. Preheat your oven 375 degrees and line a large baking sheet with parchment or a baking mat. Set aside.
2. In a small bowl add the egg yolk, heavy cream, and vanilla. Beat with a fork until combined.
3. In the bowl of a stand mixer add the butter and granulated sugar. Beat on medium speed until the mixture is light and fluffy, about 3 minutes. Add the yolk mixture and beat to combine, about 30 seconds. Scrape down the sides of the bowl as needed. Add the salt and flour and mix until the dough comes together.
4. Using a tablespoon scoop, scoop out a ball of dough and place it on the sheet. Place the cookies about 1 1/2 inches apart. Use your thumb or a rounded measuring spoon to make an indent in the center of the cookies. Press gently with your thumb until the indent in the cookie ball is about an inch across, repeat this step with each cookie dough ball.

2. Cover bowl and chill in the fridge for 30 minutes.
3. Remove dough from fridge. Form the dough into 1.5 inch balls and roll into brown sugar substitute or coconut sugar. Make an indentation using your thumb or a 1/4 teaspoon in the center of each dough.
4. Place on a large parchment lined baking sheet about 1.5 inches apart. Place the pan in the freezer while you preheat the oven.

2. In the bowl of a stand mixer fit with the paddle attachment, or a large bowl with a hand mixer, cream the butter, sugar, and almond extract together until light and fluffy- about 2-3 minutes on medium-high speed.
3. Add the salt and cornstarch into the bowl and mix until evenly distributed. Add the flour into the bowl and mix until incorporated. The dough will be crumbly and will not completely come together. But it should hold together as you scoop and roll them into balls. If it isn't holding when you try to scoop them, add 1-2 tablespoons of milk or water to the dough until it can hold shape when pressed together.
4. Scoop the dough into 1 tbsp portions (I use this cookie scoop), roll into smooth balls and place on the parchment lined baking sheets. The warmth of your hand and light pressure will help the dough come together. Press your thumb into each ball about 1/2" deep.
