1. Preheat the oven to 375 degrees. Take the grouper out of the refrigerator and let it stand at room temperature for 20 minutes.
2. To make the gremolata, add the garlic, lemon zest, parsley, parmesan cheese, and one tablespoon of olive oil to a small bowl. Mix well and set aside.
3. Rinse the fillets and pat them dry with a paper towel. Season both sides of the fish with salt and pepper.
4. To pan-sear, the grouper, heat a large, well seasoned cast-iron skillet or oven-safe, non-stick skillet pan over medium-high heat and add the remaining tablespoon of olive oil.
