DirectionsStep1Clean the clams and soak in cold water for 20 minutes.Step2Transfer the shrimp to a bowl and season with 1/2 tablespoon lemon juice and Old Bay.Step3Heat a large, deep nonstick skillet over medium heat.Step4Add 1 teaspoon of oil and sauté the chorizo, onions, garlic and paprika until soft, about 3 minutes.Step5Push aside, add the remaining 1 1/2 teaspoons oil in the center and add the rice, stirring to coat with the oil. Sauté 3 minutes.Step6Add the diced tomatoes, broth, salt, saffron threads (crumbled between fingers) and bay leaf.Step7Mix and bring to a boil, stirring once, place the bell pepper over the rice, reduce heat to low and cover tightly, cook 15 minutes.     1. Heat 1 tablespoon of avocado oil in a large paella pan or a deep 12 inch skillet over medium heat. Add the sausage and brown it for 2 to 3 minutes. Remove the sausage from the pan and set it aside.
    2. Add the other tablespoon of avocado oil to the same pan and saute the shallot and garlic until the garlic is fragrant, about 1 minute. Pour the tomatoes into the pan and stir to lift all of the brown bits from the bottom of the pan.
    3. Add the cauliflower rice, turmeric, italian seasoning, salt and fish sauce to the pan and toss until all the ingredients are well combined. Return the sausage to the pan and toss it with the rest of the ingredients.
    4. Simmer the paella for 5 to 7 minutes, until most of the liquid from the cauliflower rice has evaporated. Add the shrimp and clams, tucking them into the cauliflower rice mixture. Drizzle the butter over the shrimp and clams and sprinkle the crushed red pepper flakes on top.
