Press your thumb in the middle of each cookie, about half way down, to create a well/divet for the caramel. Bake for about 10-12 minutes. Watch towards the end as chocolate cookies are not easy to discern color/burning. Remove from oven and cool completely.
4. To make the caramel, melt the butter in a medium sauce pan over medium-low heat. Brown butter slightly, stirring frequently. Turn heat down to low. Add erythritol, heavy cream, vanilla, and sea salt. Stir to combine and dissolve sugar completely. Allow caramel to cook undisturbed on low heat for 15 minutes. Remove from heat and pour into a glass jar to cool. Caramel will thicken as it cools, at least one hour.

They may not stick to the dough because of the melted butter, but do your best to combine them. Cover the dough and chill in the refrigerator for 3 hours or up to 3-4 days. Chilling is mandatory. I highly recommend chilling the cookie dough overnight for less spreading.
3. Take the dough out of the refrigerator and allow to slightly soften at room temperature for 10 minutes.
4. Preheat oven to 325°F (163°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
