If you’ve ever ordered crispy Szechuan beef at a restaurant, breaded, deep-fried, and kissed with a spicy sticky-sweet glaze… You might be wondering how it could possibly be low carb. You’re right. This isn’t that Szechuan beef. I mean it is, and it isn’t. It isn’t breaded. It isn’t deep-fried. And the stir fry sauce isn’t quite that sweet.
I usually prefer to add celery while making the dishes like fried rice or noodles along with the schezwan sauce. So I do not use while making the sauce. But the actual authentic schezwan sauce made here in Singapore is with fresh red hot chillies. So I guess any chilies work but you have to keep adding more soya, sugar and vinegar to balance the heat levels. Some kind of dried chilies taste slightly bitter. Avoid them. I have never cooked with those round dried chilies.
