1. Melt butter in heavy, large pan. Saute sliced mushrooms until 'just' tender; approximately 5-7 minutes. Do not overcook!
2. Remove mushrooms from pan and reserve, boil down liquid in pan if necessary til just a glaze remains.
3. Chop bacon into 1 inches pieces and cook in pan, rendering fat. Cook until just beginning to brown.
4. Add the chopped onions to the bacon and cook until the onions are translucent.

1. To blanch your green beans, brings a medium-size pot of well-salted water to the boil; add in the green beans, reduce heat and simmer them for about 6 minutes, or until tender but still crisp; drain, then shock the beans in ice water to stop them cooking, and to keep them a vibrant green; pat the beans with paper towel to dry them well.
2. Place a large skillet over medium-high heat, and drizzle in about 3 tablespoons of the oil; once the oil is hot, add in the sliced mushrooms, plus a couple of pinches of salt and pepper, and saute them for a few minutes until a deep golden-brown.
3. Next, add in the garlic, and stir together until the garlic becomes aromatic, about 15 to 30 seconds; sprinkle in the Italian seasoning and stir to combine, then spoon the mushrooms onto a plate to hold for a moment.
4. Add the butter into the skillet, and once melted, add in the green beans, and toss to coat them in the butter; add back the mushrooms, and toss everything to coat well (check to see if you need more salt and pepper).
