The low, slow cooking and long cook time result in a meal with pieces of meat so tender they practically fall off the roast.
Sauerbraten usually is made with a large roast of beef or using lamb. This is venison stew however you can use the tenderloin which is the roast of the venison. If you decide the roast is the way you want to cook this, remember to cook it slow and low in the crockpot.
But, it's SO good and SO worth the time. What cut of meat is used for Sauerbraten? Usually beef, such as a boneless beef chuck roast, a rump roast, or a top round roast is used for sauerbraten.
You can add 1 teaspoon of juniper berries to the marinade if you wish. Apple cider vinegar can be substituted for the red wine vinegar. I'll often use a mix of butter and light olive oil for browning the meat. If you don't like your Sauerbraten too sour, add 2 cups of broth instead of using any reserved marinade for the cooking stage.
