1. Set the instant pot to a saute mode. When it is hot, add the cooking oil.
2. Now temper mustard seeds, chilies and after the seeds splutter, add asafoetida and curry leaves. Save half of this tadka for later use.
3. Now add onions and saute for a minute. (You don't have to soften the onions)
4. Add chopped tomatoes and allow it to cook for a while. Once the tomatoes start to lose water and become mushy, add all spices followed by tamarind water.

1. Add toor dal & moong dal to a pressure cooker or bowl. Wash it well a few times and pressure cook with 1 ½ to 2 cups water. If cooking directly cook 2 whistles. If following the pot-in-pot method cook for 3 whistles on a medium flame.
2. When the drumsticks are half cooked, add salt, turmeric, red chili powder, sambar powder and ginger garlic paste. Continue to cook till the drumsticks are fully done & tender.
3. On another burner add ghee to a small pan and heat it. When the ghee becomes hot add mustard, cumin and methi. When they crackle, add red chilli curry leaves and garlic. Add hing.

1. To a pressure cooker, add the rinsed dal with 1/2 teaspoon turmeric, 1 teaspoon salt and 3 cups (24 oz) of water. Cook for 5 whistles on medium-high flame, then lower the heat to medium-low and let it cook for another 5 to 6 minutes. Once the pressure releases naturally, open the cooker and mash the cooked dal lightly with a potato masher. Set aside. If using an Instant Pot, pressure cook for 9 minutes on high pressure with natural pressure release.
2. Meanwhile soak 1 tablespoon tamarind piece in 1/3 cup of hot water for 15 to 20 minutes. Then strain the liquid using a strainer. You will get 3 to 4 tablespoons of tamarind water/juice. Set it aside.
3. In a pan, heat 2 teaspoons oil on medium heat. Once the oil is hot, add the chopped eggplant and cook for around 2 minutes.
4. Add carrots and frozen drumsticks and 1/2 teaspoon salt and cook for 2 more minutes. Add the chopped tomato and cook for 1 minute.
