2. In a medium mixing bowl, cream the butter with the sugar until fully incoporated. Add in the egg and beat until combined. Add in the almond flour, coconut flour, caramel extract, apple pie spice, salt, baking powder and vanilla. Stir everything together. Finally, add the diced apples and crushed nuts to the cookie batter and stir everything together.
3. Drop 1 tbsp of cookie mixture on to a lined cookie sheet. Gently flatten each cookie with the bottom of a glass or dampen your fingers and gently shape the cookies. Place the cookies in the oven for 8-10 minutes or until just beginning to brown. Remove the cookies from the oven, let them cool 5 minutes and then transfer them to a cooling rack.
4. As cookies are cooling, add peanut butter and butter to a bowl and heat for 20 seconds or until it is beginning to melt. Add a little caramel extract and powdered sugar to the peanut butter and stir until sugar dissolves. Finally, carefully drizzle caramel over the cookies.
