1. Begin by trimming your salmon fillets to only 1/2 inch thickness if necessary. Place the salmon fillets in a gallon bag and pour the lemon pepper marinade over them. Marinade in the fridge for an hour.
2. Remove the salmon from the marinade and lay it out in a single layer on a plate. Season the salmon with the lemon pepper and set aside for a moment.
3. Place the 2 Tbs. Butter and 2 Tbs. Olive Oil in a large non-stick frying pan and set it aside for a moment as well.
4. In a shallow saucepan over medium heat, melt 2 Tbs. Butter to sizzling. Add the minced garlic and cook for about a minute.

The fish should look cooked up the sides of the fillets. Carefully flip the fish and cook an additional minute or until a thin metal skewer inserted in the thickest part comes out warm when touched to your bottom lip. Using a slotted spatula, remove the fish to a plate to rest.
3. Return the pan to medium heat and add the shallot and remaining 1/2 teaspoon salt, adding more oil if needed. Cook, stirring often, until fragrant and soft, about 1 minute. Add the chicken broth, lemon juice, capers and lemon zest. Simmer for 2 minutes to reduce slightly. Whisk in the butter and mustard until smooth and combined. Stir in the parsley and spoon the sauce over the salmon.
