1. In a medium bowl, beat your cream cheese until it looks creamy. Add eggs and heavy cream, and beat until well combined. Add the remaining ingredients and mix until the batter looks smooth.
2. Heat your skillet over medium-low heat. Add just enough butter to the skillet to lightly coat it. Once hot, pour ½ cup of batter (1/3 cup for an 8" skillet) into the pan and swirl into a thin layer that reaches the edges of the pan.
3. Wait for the edges to dry, and then gently loosen the sides all the way around with a butter knife. Keep one edge lifted, work spatula underneath and flip.
4. Cook on the other side until golden brown. Transfer the pancake on a plate, lightly grease with butter (to prevent the pancakes from sticking to each other), then continue with remaining batter. Make sure to keep your skillet lightly coated with butter as you continue.

1. Put all of the ingredients for the crepes (in the order that they are listed) 1/2 cup warm water, 1 cup milk, 4 large eggs, 4 Tbsp melted butter, 1 cup flour, 2 Tbsp sugar and a pinch of salt in a blender and blend until well combined.

3. Melt about 1 tablespoon of butter in a skillet and sauté the rolled cheese crepes on medium heat until golden brown on both sides. They don't take long to sauté. Be careful not to burn them.
