The only ingredients you’ll need for this Scottish rowan jelly recipe are the rowan berries, apples, juice of a lemon, 3 sprigs of rosemary, sugar and water. The amount of sugar depends on the amount of juice you get from cooking and straining the rowan berries and apples.
Put the rowan berries and apple pieces in a big heavy bottomed pan and cover with water. Cook gently for 40 minutes. After this time the water will be red and the fruit very soft. Strain the fruit through a fine sieve or jelly bag reserving the liquid. Do not be tempted to squash the fruit it will result in a cloudy jelly.
Cut the apples into quarters. Put the rowan berries and apples in a large pot. Barely cover the berries with cold water. Set the pot over high heat and bring to the boil, then lower the heat and simmer for 40 minutes or until the fruit becomes soft. Strain through a large sieve lined with cheesecloth for at least 4 hours or overnight.
Rowan jelly is best made with a pectin source, otherwise the jelly will be too liquid and won’t set. Crab apples can provide this, and luckily the two species are often found growing near each other. If you can’t find crab apples, the cores of Bramley apples will work just fine.
