As an added bonus, you can render any excess duck fat that you cut out. Just slice it into small pieces. Then put it in a pan with some water. Don’t worry about the water, it will cook out. Simply heat the fat for an hour or so on medium heat until the fat has melted and the crispy pieces of skin are left over.
Put the duck on a rack over a roasting pan, and store in the refrigerator, uncovered. This lets the skin dry, and gives the salt time to brine the duck. Prep the duck: One hour before cooking, remove the duck from the refrigerator. Toss the stuffing ingredients, except tangerine, until well coated with oil.
