2. In a mixing bowl, beat the ½ cup butter (1 stick) until smooth. Add in the 2 cups almond flour and the 2 egg whites and mix well. Stir in the ¼ tsp Xanthan gum.
3. Roll the dough into a log shape in parchment paper or saran wrap and place in the freezer for at least 30 minutes to chill before moving on.
4. After 30 minutes, remove dough and unroll from parchment paper. With this method, you can simply slice the “log” in ¼ inch slices for your crackers.
