WEB400 g dried spaghetti. 175 g piece smoked pancetta, without rind. 2 tablespoons extra virgin olive oil. 2 finely chopped garlic cloves. 2 tablespoons flat leaf parsley, finely chopped. 3 large eggs, beaten. 50 g pecorino cheese, finely grated. salt and black pepper.
WEBMethod. Heat the olive oil in a large pan and add the grated courgettes, garlic, lemon zest, rosemary and chilli flakes. Cook gently over a medium-low heat for 20–25 minutes until the courgettes are very soft. Stir in the mascarpone and two-thirds of the cheese, then taste and season with salt and plenty of pepper.
