Sambar, a flavorful South Indian Lentil Stew made with lentils, vegetables, tamarind, curry leaves and spices prepared in the instant pot (pressure cooker). Start the instant pot in sauté mode and heat oil in it. Add all the tempering ingredients. When the mustard seeds start to splutter, add the chopped onions and sauté for 2 minutes.
To get a hotel style sambar, use masoor dal and tur dal in equal quantities. If cooking dal in pressure cooker, let it whistle for 2 to 4 whistles on a medium flame. To cook in a Instant pot, pressure cook for 9 mins. If you do not have a cooker, then cook in a pot adding more water as needed.

If the consistency looks very thick, you can add some water. You can easily adjust the quantity of water and make medium to thin consistency of sambar. But keep in mind not to add too much of water as this will dilute the flavors.
