2. Place the chocolate and coconut oil in a heat proof bowl and melt over a pan filled with a little water. Stir a couple of times. Remove the bowl from the pan and allow to cool a little. (Alternatively, heat in the microwave.**)
3. Mix the peanut butter with the sweetener (if using) and salt. Use firmer peanut butter from the bottom of the pot.
4. Add about 1 tsp of chocolate to each cup and use the back of a teaspoon to coat the sides. Place in the freezer to set for 10 minutes.

2. In a medium heat-safe bowl, heat coconut oil and peanut butter either on the stove or in the microwave in 20 second bursts, stirring after each addition until smooth. Add vanilla, almond flour and powdered sweetener and stir until smooth. Spread evenly into the prepared pan. Place pan in the freezer while you melt the chocolate.
3. Melt chocolate chips and remaining coconut oil - either on the stove or in the microwave in 30 second bursts, stirring after each addition. (Be careful not to overheat so it doesn't burn). Mix until smooth and spread evenly on top of the peanut butter layer.
4. Chill in the refrigerator until completely firm, at least 2 hours. Cut into squares.Store in an airtight container in the fridge.
