1. Preheat oven to 350 degrees Fahrenheit.
2. In a stand mixer with the paddle attachment, combine the Red Velvet Cake Mix, oil, water, and egg until no dry lumps appear. Batter will be thick and sticky.
3. Pour the red sugar crystals into a bowl. Use a trigger scoop (about 1½ to 2 Tbsp) to measure the dough. Squeeze the scoop to release the cookie dough ball directly into the bowl of sugar crystals. Swirl the bowl to coat the cookie dough balls, one at a time, in the red sugar crystals. Place coated dough balls a few inches apart on a prepared baking sheet lined with parchment paper or a silicone baking mat.
4. Bake at 350˚F for 8 to 10 minutes. Immediately press a chocolate kiss in the center of each warm cookie gently. Transfer to a wire rack to cool.

If you want a more vibrant hue, beat in more food coloring a little at a time. Cover and chill the dough in the refrigerator for at least 2 hours (and up to 3 days). If chilling for longer than a few hours, allow dough to sit at room temperature for at least 15 minutes before rolling and baking because the dough will be quite hard.
4. Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats. Set aside. Also, make sure there’s room in your freezer because the cookies will need to be placed inside to prevent the chocolates from melting.
