2. Then, melt the white chocolate chips (and add peppermint extract, if necessary) and spread over the set milk chocolate.
3. Crush the sugar free candy canes and spread over the still melted white chocolate, then set aside to let everything set.
4. Break the set peppermint bark into pieces, store in an airtight container for up to 2 weeks.

3. Melt white chocolate chips and peppermint in the top of the double boiler, or similar set up. This should only take 1 or 2 minutes, too long can overcook it making the chocolate grainy and dry.
4. When melted, remove the top pan from the double boiler and place on a heat safe surface. Stir in the pecans, if using.
