It's really simple to make low carb oatmeal, a.k.a noatmeal. You cook it on the stove top like you would regular oatmeal. You can also add hot water to your keto oatmeal and let it sit, like you would instant oatmeal.
This low carb oatmeal is one of a handful of recipes that we use coconut flour in. It's not that we don't like coconut flour, we just prefer to use almond flour. The coconut flour adds a nice hint of sweetness to this keto oatmeal.
COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets. BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets.
