Harissa recipes. This is a fiery North African paste that is orangey-red in colour. It’s a mixture of peppers, dried red chillies, garlic, caraway seeds, ground cumin and coriander, tomato purée, salt and olive oil. It can be used as a condiment or as an ingredient in cooking and provides a real boost as an accompaniment to vegetables and pulses.
Caraway seeds are a common ingredient in harissa paste, but if you don’t have them, fret not — simply leave them out or compensate with more of the other spices. First, rehydrate your chilies in hot water, then remove the stems and seeds. While that’s happening, toast your whole cumin and coriander seeds and grind in a mortar and pestle.
Traditionally, the three spices of harissa paste are cumin seeds, coriander seeds and caraway seeds. But I encourage you to be playful.
TIP: Harissa Paste can be stored in the fridge for months, by covering the top of it with a thin layer of olive oil after each use. Baked Sweet Potato Fries with harissa aioli !
