4. Cook the tajín mangoes - Cover and cook at 135° for 8-10 hours. Cooking time varies according to thickness of mangoes, humidity level, and temperature of your appliance (mine runs at 135°). I start checking at around 8 hours. You're looking for pliable fruit that is not overcooked. You don't want chips!
