1. Preheat oven to 350°F. Spray two 9-inch round pans with baking spray.
2. Beat spice cake mix, water, eggs and oil in a large bowl with an electric mixer on low speed for 30 seconds. Beat on medium speed 2 minutes.
3. Pour batter evenly into pans (about 2 1/2 cups per pan) and bake 23 to 28 minutes or until toothpick inserted into center of cake comes out clean. Remove from oven and cool cakes in pans on wire rack for 15 minutes. Remove cakes from pans and cool completely.
4. Whisk together brown sugar, butter, half and half and vanilla extract in a small pot. Heat over medium-low heat, whisking frequently until sauce is thick enough to coat the back of a spoon, about 12 to 15 minutes. Remove from heat and allow sauce to cool completely.

1. Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside.
2. Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. Add in any additional mix in's if desired. If you have the time, refrigerate the dough for 15-20 minutes (it will make it a little easier to work with, since it is sticky).
3. Using a medium scoop or spoon, scoop the dough onto the prepared baking mat. Roll the dough balls in cinnamon sugar.
4. Bake for 9-11 minutes, or until the cookies are set. You don’t want them to brown. Allow to cool on the pan for a couple minutes and then transfer to a cooling rack.
