1. Preheat oven to 200°C (400°F). Line a 9x5-inch loaf pan. Cover with parchment paper. Oil the paper and pan with olive oil. Set aside.
2. In a small mixing bowl, add active dried yeast, maple syrup, and lukewarm water. The yeast 'eats' the sugar to delivers gas, and no sugar will be left in the recipe. Set aside 10 minutes to proof.
3. In a large mixing bowl, stir all the dry ingredients together: almond flour, psyllium husk, baking powder, salt, and flaxseed meal. Set aside.
4. In another bowl, add the whole eggs, egg whites, and olive oil. Whisk with an electric beater, on high speed for 60 seconds or until lighter in color and foamy.

1. Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
2. Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
3. Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
4. Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. 4. The easiest is to do 8 drop biscuits. If you want to cut biscuits, spread the dough on a floured surface about 3/4 inches thick. You can cut six 2 1/2 inch biscuits or eight 2 inch biscuits.

1. Warm liquid ingredients: Combine the milk, water, 4 tablespoons butter, and sugar in a microwave-safe bowl. Microwave until temperature of the mixture reaches between 95°-115°F (about 1 minute). No cooler, no warmer. Use an instant read thermometer. Stir until butter is at least mostly melted.
2. Combine with the yeast: Pour the heated mixture into the bowl of a stand mixer and add salt. Sprinkle the yeast over top.
3. Stir in flour: Add 3 cups of the flour and mix on medium speed with the dough hook attachment. (I like to use the dough hook with my hand to get the ingredients combined then place dough hook onto the stand mixer to do the rest.) Continue to mix for 3 minutes while adding the remaining flour 1/4th cup at a time until dough is no longer sticking to the sides. I rarely use all 4 cups. You want it tacky, not too dry.
4. Let rise: Cover the bowl with plastic wrap and set aside to rise for 15 minutes.
