1. Prepare celery root by trimming off ends and outer layer of the root. Carefully chop into large cubes. Note: celery root requires are firm hand and a sharp knife.
2. In a large pot over medium heat, melt butter, then add onions, chopped celery stalks and garlic. Cook for 5-7 minutes or until the onions and garlic translucent, stirring frequently. Remove about 2 cups of this mixture and set aside to add back to the soup later.
3. Add the celery root, water, salt and celery seed to the pot. Cover and simmer for 20-25 minutes until the celery root is tender. Remove from heat.
4. Using an immersion blender, blend the soup until it is perfectly smooth. Stir in half and half and the reserved celery/onion mixture. Reheat slightly if necessary and serve.

2. Meanwhile, chop the celery, fennel and onions into small pieces. Heat a soup pot over medium high heat and add the butter and vegetables and sherry. Turn the heat to medium, cover the pot and cook until the vegetables are completely tender. Add a little water as necessary and stir the vegetables periodically to prevent burning.
3. While the vegetables are cooking, begin removing the meat from the rotisserie chicken and dice it.
4. When the cauliflower is cooked, drain and it to a blender. Add half of the chicken broth and blend until it is pureed and smooth. Pour it back into the cooking pot until ready to add to the soup.
