3. Close the lid and cook on high for about 4 hours or until the pork is tender. If using an Instant Pot, use the slow cooker function with the seal set to Venting.
4. Use a slotted spoon to remove the meat from the slow cooker, and place it on a board or plate. Use two forks to gently shred the meat, then transfer it to a serving platter.

When that layer of meat is browned, remove to a plate and add the next layer of meat and cook it until browned and then remove to the plate. Rinse and repeat until all meat is browned.
3. When meat is browned and removed to a plate, add the onion and garlic to the Dutch oven pot. Cook until onions are translucent and caramelized, about 5 minutes or so, stirring occasionally. Return meat to pot.
4. Add the reserved orange zest and juice and the next 6 ingredients to the Dutch oven (through the chile pepper). Bring to a boil and then reduce the heat and cover. Simmer for 2 hours.
