For the pizza dough, I have had people use the brioche dough with less yeast for pizza dough. Personally, it’s too soft for me to call pizza dough. Traditonal pizza dough is a lean dough, not enriched, although technically has a little oil in it for best tast and texture ( but no eggs or butter). You could do that!
Brioche is a yeasted dough that falls firmly into the enriched dough camp. Unlike simple lean doughs (think French bread or pita bread ) that only need flour, yeast, water, and salt, enriched dough also has sugar, butter or oil, eggs, and milk or cream.
Once your yeast is foamy and blooming, add lightly whisked eggs and allulose to the stand mixer. Using a dough hook, mix together on a low speed until lightly combined. Add half of your low carb “flour” mix and continue kneading on the LOWEST mixer speed for 2-3 minutes.
